Melt 200g of dark chocolate using a double boiler or microwave. Let it cool slightly.
Separate 3 large eggs. Beat the egg whites until stiff peaks form.
In another bowl, whisk the egg yolks with 1/4 cup sugar until pale and creamy.
Fold the melted chocolate into the egg yolk mixture until well combined.
Whip 1 cup of heavy cream with 1 tsp vanilla extract until soft peaks form.
Gently fold the whipped cream into the chocolate mixture.
Carefully fold in the beaten egg whites until no streaks remain.
Spoon the mousse into serving dishes and chill for at least 2 hours. Enjoy!
